Oh the carnage...

As I entered the laundry room to start the first load of laundry, I smelled a foul odor.  I immediately thought of the dead mouse that got caught in the air conditioning fan of my car engine the morning we found out we were pregnant with Leo.  The Lord giveth - and the Lord taketh away.  It was September and the heat was too much to bear.  When I turned on the AC, the fan whipped around and took off his poor little head.  The smell a few hours was definitely NOT worth a couple minutes of AC...  And now I was smelling the same odor, except it was coming from my basement!

I looked down to see a pool of blood on the floor.  I immediately opened the deep freezer and realized that all of my meat had not only thawed out and melted, but some of the vacuum sealed bags had opened and the meat juice was leaking out of the bottom of the deep freeze.

In late January, I purchased $225 worth of beef from our local farmer and housed it in this very unit.  The one that broke.  The one that leaked out at least $150 or more of local grass-fed beef juice.


Not to mention the french fries.  Oh my beloved french fries.  I love french fries.  We eat them at least once a week. 

And that $15.00 chicken I bought (it's the nasty looking blob on the bottom right).



Ohhh the carnage...


4 trash bags later and we just have to begin again.


But this time we are installing our brand-new dehumidifier as insurance!!!!

Delicious desserts to feed a group for a week!


I made 2 lbs of candied pecans to serve throughout the week with coffee and tea.  2 lbs of candied pecans only made it until Tuesday...

Sugar Coated Pecans (Link to original recipe)

Ingredients

2 egg whites
2 tsp water
1 tsp vanilla extract
1 pound pecan halves
1 cup white sugar
3/4 teaspoon salt
1/2 teaspoon ground cinnamon

Directions

1. Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet.

2. In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon.


3. Add pecans to egg whites, stir to coat the nuts evenly. Pour in the sugar mixture bit by bit while stirring until coated. Spread the nuts out on the prepared baking sheet.


4. Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.


MONDAY
Chocolate Chip Cookies (Link to original recipe here)

I talk about these all the time.  I have a bit of an obsession with chocolate and absolutely love these!

Ingredients

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semisweet chocolate chips

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla.  Combine baking soda, flour and salt and stir into batter.  Stir in chocolate chips and drop by large spoonfuls onto ungreased pans.

3. Bake for about 10-14 minutes in the preheated oven, or until edges are nicely browned.




TUESDAY

Cheesecake!!!  I was so excited to serve it and I was so excited about how easy it was that I never took a picture!!!  I was at Costco and there was a sales booth with a gentleman selling various cheesecakes.  I chose the 16 slice cheesecake with Pineapple, Blueberry, Strawberry and Cherry flavors.  The cheesecake was so big that we were able to serve it twice!  Once for dessert and then the following day I cut it up into bite-size pieces to serve with coffee and tea.
WEDNESDAY

I decided to throw in a low-calorie, light dessert.  We prepared such heavy breakfasts and dinners that I didn't want to send all of my relatives into cardiac arrest.  After all, we were in Deep Creek.  And one of my close doctor friends was recently sent to Deep Creek for her "Rural Physician Rotation"...  I'm sure all the doctors have a full set of teeth.  But I wasn't willing to find out.

So, I brought some Angel Food cake mix and a couple cans of crushed pineapple.

Ingredients
16 oz Box of Angel Food Cake Mix
20 oz can of crushed pineapple


Directions

1) Open the box of Angel Food Cake Mixe

2) Open the can of crushed pineapple

3) Mix and bake at 350 degrees for 25 minutes.

And that's it!!  You can serve it with whipped cream or ice cream if you want.  We served it plain and it was just as enjoyable.  By the time dessert rolled around, I just wasn't ready to get all complicated in the kitchen!!



THURSDAY

Thursday was originally scheduled to be Oreos night.  But I got a wild hair up my derrier and started peeling and cutting apples for an Apple Crisp.  My Aunt Liz jumped right in and helped me assemble them early in the afternoon so we could set them to bake during dinner.  Since Aunt Liz helped me out, I also decided to make a couple bags of the Ghirardelli brownies from Costco - but with a secret ingredient!!

And while we were working, my older brother whipped out a box of Rice Krispies and a bag of marshmallows and made Rice Krispie Treats.  They were gone before I could even find my camera.  To say my family has a sweet tooth would be a gross understatement...

Apple Crisp (Link to original recipe here)
We cut the butter and sugar and had a delicious result.  See the link above for the full dessert directions!

Ingredients


2 cups all-purpose flour (We didn't have any flour so we skipped this!  Our oats burnt a tiny bit and we had to pick them off.  I recommend using flour!!)
2 cups rolled oats
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3/4 cups packed brown sugar
6 tablespoons butter
2 quarts peeled, cored and sliced apples

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. In a large bowl, combine the flour, oatmeal, cinnamon, nutmeg and brown sugar. Cut butter into mixture until crumbly.
4. Pour apple slices into pan and cover with the crumb mixture.

5. Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes or until apples are tender.



And the brownies!!  OOOOOOHHHH the brownies.  I will dream of these often until I make them again.  I made them per the box directions but instead of vegetable oil, I used my newly bought Coconut Oil.  I have never made anything with coconut oil before but I am now completely sold! 


We served both with vanilla ice cream.



THURSDAY

Thursday was my niece's birthday!  So we didn't have to worry about dessert.  It arrived as a gift from my crazy Uncle Bernie.  He's the best!!

Earlier in our trip I had recounted a story to Uncle Bernie that is permanently etched in my memory. When I was about 9 and my little brother was 5, we arrived to Uncle Bernie's house in Port Hood, Nova Scotia. A few minutes after we arrived Bernie told us, "Hey Michael and Lisa, run out to the fridge and pick one. You get one all to yourself and you don't have to share with anyone." We ran out to the fridge and opened it up. Inside were two huge cakes: One chocolate (obviously meant for me) and one vanilla and strawberry (obviously for my little brother). We couldn't beLIEVE it!!! We pulled out the cakes, grabbed some forks and went to town. My mother was of course mortified and made us stop about a quarter of the way into our cakes. We were done anyway though and we ran outside to play and work off all that sugar. Best day of my life!!!

It never occured to us that he bought the cakes to serve to everyone.  We were convinced that he purchased each cake with us in mind.  Uncle Bernie just has a way about him that makes everyone feel all warm and fuzzy inside!!

When I told this story to Bernie, he just looked at me and said "Oh really? I don't even remember that. But I'm sure glad I did it!"



Leah was sweet enough to share her cake with us.  I was definitely not that nice when I was 8 ;)

Make-ahead homemade dinners to feed the masses for a week!


All of the dinners were prepared before we left for the trip (aside from spaghetti night)!!  And they were magically delicious.  The only thing we had to prepare nightly was the salad.  It was our vegetable for each meal.

Ingredients were simply lettuce, feta cheese, diced peppers, diced tomatoes and Greek dressing. 

SUNDAY

Lasagna (recipe found on the box).  My sister added spinach to the ricotta cheese and she made 3 or 4 lasagnas.  All I know is we were swimming in leftover lasagna the entire week.  It was filling and delicious! 

It was a hell of a way to start off our week!


MONDAY

Tuesday was Chicken Pot Pie and Shepherd's Pie night!
  

I made 2 Shepherd's Pie dishes and my sister made 2 Chicken Pot Pie dishes.  We prepared and froze them and just cooked them on Tuesday!

Shepherd's Pie

Ingredients
2 lbs grass-fed beef
1 can Beef Consomme
5-7 carrots
1 16 oz bag of peas
5 lbs Yukon Gold potatoes
1/2 cup milk
1/2 stick butter
5 cloves of garlic
1 cup shredded cheddar cheese
Salt and Pepper

Directions
1) Heat up a little butter in a pan and throw in 2 cloves of garlic.  Cook for 2-3 minutes over medium heat.  Throw in the beef and cook.  When it is done, drain the fat and then add the beef consomme.  Bring it to a boil and then simmer for a few minutes.  Layer the beef in the bottom of a 9x13 pan.

2) Chop the carrots and cook for 10-15 minutes over medium heat.  Steam the green beans.  Mix together and layer on top of the beef.

3) Wash, peel and chop the potatoes.  Boil them until soft (about 10 minutes).  Mash the potatoes and add the milk, 3 cloves of garlic and butter.  Layer it on top of the veggies and top with cheese.

4) When the entire dish is completely cool, cover it and freeze until you are ready to cook and serve!!

Chicken Pot Pie (Link to original recipe here)

This is without a doubt, the best chicken pot pie I've ever tasted!

Crust

2 1/2 cups all purpose flour
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, cut into pieces, room temperature
1 8-ounce package cream cheese, cut into pieces, room temperature

(Okay I just noticed the butter in the crust - And you called ME Pau.la Dee.n??????)

Chicken
1 3 1/2-pound whole chicken
12 cups water
2 large onions, quartered
2 large carrots, coarsely chopped
1 large leek, sliced
12 small thyme sprigs
1 bay leaf

Filling and assembly
3 tablespoons olive oil
2 red bell peppers, cut into strips
1 large onion, chopped
8 ounces shiitake mushrooms, stemmed, caps sliced
4 ounces green beans, boiled 1 minute, cut into 1-inch pieces
3/4 cup chopped green onions
1/2 cup drained oil-packed sun-dried tomatoes, chopped
1 tablespoon chopped rosemary

1/2 cup (1 stick) unsalted butter
1/2 cup plus 2 tablespoons all purpose flour
1 cup milk
1/4 cup whipping cream
4 1/2 teaspoons beef base* or other concentrated beef-flavored broth*

1 egg, beaten to blend (for glaze)

Preparation For crust:
Mix flour and salt in processor. Add butter and cheese; blend until moist clumps form. Shape dough into 6-inch-long log. Wrap; chill while making chicken and filling.

For chicken:
Place all ingredients in large pot; bring to boil. Reduce heat; simmer until chicken is cooked through, about 45 minutes. Transfer chicken to large bowl; cool. Discard skin and bones. Cut meat into 1-inch pieces; return to bowl. Strain cooking liquid into large saucepan. Boil until reduced to 3 cups stock, about 1 hour.

For filling and assembly:
Heat 1 tablespoon oil in large skillet over medium heat. Add peppers and onion; cook until soft, about 6 minutes. Transfer to bowl with chicken. Heat 2 tablespoons oil in same skillet over medium-high heat. Add mushrooms; sauté until just brown, about 4 minutes. Add to bowl with chicken; mix in next 4 ingredients.

Melt butter in large saucepan over medium heat. Add flour; whisk 2 minutes. Gradually whisk in 3 cups stock, then milk, cream and beef base; bring to boil. Season sauce with salt and pepper. Stir 3 cups sauce into chicken mixture (reserve remaining sauce for another use).

Cut prepared dough crosswise into 6 equal pieces. Roll out pieces to 7-inch rounds on lightly floured surface. Divide filling among six 2-cup soufflé dishes. Cover each dish with 1 dough round. Press overhang to side of dish to adhere. (Can be made 1 day ahead. Cover; chill.)

Preheat oven to 350°F. Brush top of each dough round with egg glaze; cut 3 slits in each for steam to escape. Bake pies until crust is golden brown and filling is heated through, about 45 minutes.

TUESDAY

Chicken Tetrazzini!! Or as Pioneer Woman calls it: Creamy Chicken Spaghetti Casserole

I have made Chicken Tetrazzini a few times in the last few weeks.  It's so darn delicious, I had to do it for the group.  I took Pioneer Woman's recipe and quadrupled it.

Ingredients
10 Chicken Breasts
1 stick (1/2 Cup) Butter
8 ounces sliced Baby Bella mushrooms
¼ cups Dry White Wine
Kosher Salt And Pepper
¼ cups Flour
2 cups Chicken Broth (reserved From Chicken Or Canned)
1-½ cup Whole Milk
¼ cups (additional) Dry White Wine
1 cup Freshly Grated Parmesan Cheese
1 teaspoon Kosher Salt, Or To Taste
Freshly Ground Black Pepper
Extra Cheese, For Sprinkling
1 pound Linguini

Preparation Instructions

Bake chicken breasts in oven at 350 degrees for 30-40 minutes.

Melt 2 tablespoons butter in a large skillet. Throw in mushrooms, add 1/4 cup white wine, and sprinkle with salt and pepper. Cook over medium heat for 8 to 10 minutes, or until liquid has totally evaporated. Remove mushrooms from skillet. Set aside.


Bring broth to a boil. Break spaghetti into thirds (shorter pieces). Add spaghetti pieces to boiling broth and cook. Drain when al dente.  Pour into pan, add mushrooms and chicken, and stir.


Return large skillet to medium-low heat. Add 6 tablespoons butter. Sprinkle flour over butter, whisking to combine. Cook for 1 or 2 minutes. Pour in 2 cups broth and whisk to combine. Pour in milk, additional 1/4 cup wine, salt and pepper to taste, then cook and bubble until thick. Turn off heat, add Parmesan cheese, and stir.


Pour cream sauce over chicken/mushroom/spaghetti mixture in a 9 x 13 casserole pan. Bake at 350 degrees for 30 minutes or until golden brown and bubbly. (Or you can let it cool and freeze it to cook when ready!)



I thought I was bored of this recipe.  Then I passed the Baby Bella mushrooms in Costco and my mouth started to water again.  I will be making it again tomorrow night ;)

WEDNESDAY

Does it get easier than popping a Spiral Ham from Costco in the oven???  My sister also prepared scalloped potatoes and froze them before we left for our trip.  Throw in a salad and some dinner rolls and dinner is ready!

THURSDAY

Apparently 4 Chicken Tetrazzini's is a ridiculous amount of food.  As the crowd got a little smaller (we were down to 18-20 people), we were able to pull out more leftovers.


FRIDAY
On Friday's in Lent, we don't eat meat.  So spaghetti was the easiest and best option.  I purchased 2 jars of this family size Victoria Marinara Sauce from Costco and we cooked two boxes of linguini.

Maybe it was just me, but that marinara sauce was GOOOO-OOOD!

And there you have it.  6 nights of delicious dinners.  Most prepared before-hand and frozen.  It made our vacation completely enjoyable and every meal was absolutely delicious.  We received rave reviews from all of our family members.  And although there was quite a bit of prep work to do before we left, splitting the dinners between my sister and I made it tolerable.
